Cauliflower Rice

Ingredients
1 Cauliflower
Extra Virgin Olive Oil

Method
Grate one whole cauliflower
Into a hot frying pan add some olive oil, add the grated cauliflower – stir fry for a few minutes
This gives the cauliflower a lovely nutty flavour and colour!

Variations
Curried Cauliflower Rice:  Add 1 tablespoon turmeric or curry powder.
Herbed Rice: Add a small amount of fresh basil, parsley, coriander, spring onions, and/or other herbs of your choice.
Vegetable Rice: Add your favourite diced vegetable; sauté with the onions.
Lime & Coriander Rice: Add the zest and juice from a lime and some fresh coriander to make a tasty change
Spanish Cauliflower Rice: Add 1tsp. red pepper flakes 2-3tbs your favourite salsa, a diced tomato, small amount of diced jalapenos and some fresh coriander.
Italian Cauliflower Rice: Add 1tbs dried oregano, a little fresh basil, a diced sundried tomato and some diced red onion.
Mexican Cauliflower Rice:  Fry some diced onion, diced red pepper in a little olive oil for about 5mins, add a couple of cloves of minced garlic, add tsp cumin, tsp garlic powder, tsp cayenne and stir to combine, add cauliflower rice, reduce heat and cover the pan for 5-8 minutes until tender.  Stir in 2-3 tbs salsa and some fresh coriander, garnish with slices of fresh avocado
Egg Fried Cauliflower Rice:  Fry a diced onion with a few slices of bell pepper (chopped) for 3 mins in a small amount of olive oil, add 5-6 halved cherry tomatoes and a small handful of frozen peas, fry for a further two minutes.  Add two beaten eggs and ensure you cover the veg, after half a minute move around gently until it resembles a scrambled texture, add the cauliflower rice and stir fry for around 4 minutes until the ‘rice’ is cooked.  Season with salt and freshly ground black pepper.

Once cooked serve immediately
