Coconut Chicken Curry

Ingredients
1tbs Turmeric
1tsp Cumin
1tsp Ginger
1tsp Coriander
240ml Coconut milk
2 Chicken Breasts
1 onion, sliced
1 Red Pepper, sliced
1 Green Pepper, sliced
100g mushrooms, sliced
40g Medijool Dates
1 Aubergine, sliced
125g green beans, sliced
90g broccoli

Method
In a bowl place the turmeric, cumin, ginger and coriander, add the coconut milk and mix well
Dice and add the chicken breasts to the mixture
Into the slow cooker place the onion, peppers, mushrooms, dates, aubergine, green beans and broccoli
Add your chicken mixture to the slow cooker
Cook on low heat for 6 hours
Stir and serve
